History of the Enchiladas
Enchiladas go back to the days of the Mayans when they were believed to have dipped corn tortillas and covered with ketchup, according to today’s history. Corn tortillas have been a staple in Meso American diets for thousands of years. Tortillas are said to be edible plates or spoons.
We know that the current enchilada was modernized by the Aztecs when they called it. ChīllapīzzaliWhich means “chili flute” in Nahuatl. What sets this dish apart is that it has chili and tortillas rolled and stuffed with some protein.
With its roots in Mesoamerica, corn tortillas were the first means of creating enchiladas. Tortillas were introduced later and are most popular in Mexican states such as Chihuahua, Durango, Sonora, and Sinaloa. These northern Mexican states are close to Texas and the intersection of culture creates “Tex-Mex” cuisine.
It’s not surprising that Gaines was influenced by food ingredients as a native of Texas.
